Our Journey and Passion
THEbag | La Bolsa was created inside Hotel Herrera with one purpose: to bring intentional, handcrafted food to the world beyond our kitchen. What began as a simple bag became a symbol—filled with cured meats, fermented pickles, house-made sauces, and fire-kissed breads, all crafted in-house with meaning and care.
Nothing we serve is anonymous. Every ingredient has a story.
